This is a jig composed by fiddler Liz Kane, who named it after (what she wrote) “a fantastic restaurant in the village of Letterfrack.” It appears she regretted the closure of the restaurant but wanted to keep its memory alive with the above title. ‘Pangur Bán’ is also the title and subject of a poem by an anonymous medieval Irish monk, writing about his white cat.
